This is a Common Gardenia bloom, which has not yet opened. Gardenia or Rosal (Gardenia jasminoides)) is one of the popular ornamental plants grown in the Philippines. Music from the 1900′s (early blues, jazz, swing) are on my playlist lately.  I find that I work better listening to instrumental music and songs with less distracting lyrics. The more unfamiliar I am with the songs and the lyrics, the better. I mostly listen to Frank Sinatra, Matt Monroe, Louis Armstrong (Satchmo) and Jack Teargarden (Big T).

Louis Armstrong (pictured above) was a trumpeteer and Jack Teargarden was a trombonist (regarded as the Father of Jazz Trombone). They’re both singers, too and performed a lot together. Chicken curry is one of the first dishes I learned to cook when I was a kid and this is a simplified version I made last week for dinner.

I used chicken breast instead of the usual chicken thighs, legs and wings (which my dad and I love!) because we’re disciplining our household to consume more of the healthier white meat.

Easy Chicken Curry

Serves: 4-5
 

Simplified version of Pinoy Chicke Curry.
Ingredients
  • 1 kilo chicken breast, cut in 1″ strips
  • 1 tbsp ground pepper
  • ½ tbsp salt
  • 1 tbsp oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 whole chayote/sayote or potato, cut in 2-inch strips
  • 1 large carrot, cut in 2-inch strips
  • 1 red bell pepper, cut in 2-inch strips
  • 1 cup coconut milk
  • 2 tbsp yellow curry powder

Instructions
  1. Rub chicken breast strips with salt and pepper and heat pan with oil.
  2. Pan-fry chicken breast in medium heat until the meat turns white. Remove the chicken from the pan and set aside.
  3. Saute onion and garlic in the same pan.
  4. Pan-fry vegetables for 3 minutes in medium heat and cover pan for 3 more minutes.
  5. Add curry and mix vegetables.
  6. Turn heat to low and add the coconut milk. Let it simmer for 5 minutes.
  7. Add the chicken breast back to the pan and turn off the stove.
  8. Carefully mix the chicken breast in the dish.

Some last thoughts about this dish:

  • 1/4 cup – 1/2 cup chicken stock can be added, especially if the coconut milk you’ll use is thick.
  • Evaporated milk can be substituted for coconut milk.
  • You can decrease the curry powder by 1 tbsp. You can also use other kinds of curry. Curry powder in the Philippines is yellow and it’s not as spicy as other Asian curry powders.
  • You have to eat this with rice. ^______^

I’m in need of a new mattress. What I am using now is a spring mattress that’s already more than 5 years old. It’s not good for my back.

One reason we suffer from back problems (or it’s worsened) is the kind of mattress we sleep on. Quality bed mattresses don’t come cheap but it’s one of those things that are worth spending more on, especially if one suffers from any kind of back problems or if we’re in our senior years. One of the many benefits of growing your own veggies, is having them on-hand. No need to take a trip to the grocery store or to the local market. Just pick them yourself from your yard or balcony or wherever your garden is.

Spinach is one of the plants we have in our garden and though the bugs also love them (see the photo below), we don’t mind sharing it with them. Holes on leaves are fine as long as the bugs aren’t on my plate. Continue Reading…

Another one of my favorite dishes. It can be eaten with rice, used as filling for tortilla wrap or lettuce (or any other fresh greens) wrap or even on a bun.

If you want to cook a real taco meat filling, I added links from reputable sites at the end of this post. Maybe one day I’ll feel like cooking a proper taco meat filling and use those recipes.

In the mean time, here’s how I cook it, the no-fuss way.

Simple Taco Meat Filling
Prep time:

Ingredients
  • ½ kilo ground pork or beef
  • ¼ c water
  • 3 cloves garlic, crushed and diced
  • 1 whole red onion, diced
  • 3 tomatoes, diced
  • salt and pepper, to taste

Instructions
  1. Place ground meat on a pan and add water. Cook it in medium heat. Wait until the water’s absorbed and the natural fat of the meat comes out. The meat will start to fry on its own around 10 minutes.
  2. Add the onion and garlic and mix it with the meat.
  3. Add the tomatoes and mix them all again in the pan. Leave it for 3 minutes to let the tomatoes cook well.
  4. Turn off the heat and season with salt and pepper.

My Mad Fat Diary is a 2013 British drama based on Rae Earl’s real-life diary, which Rae kept during her teenage years. The protagonist in the drama is Rae Earl (played by Sharon Rooney) and it’s set in the ’90s (1996 to be precise).

So what’s the story about? Rae is a 16-year-old girl who suffers from depression and spent 4 months in inpatient rehab centers. Wait, she stayed at a psychiatric hospital. The drama is about Rae’s life after she left the hospital and how she tries her best to live a “normal teenage life”. It’s mostly the things inside her head that’s revealed in the drama.
